Have you tried baking with zucchini?
In baking, consider zucchini as an ingredient like bananas or applesauce.
It adds a wonderful texture and moistness to baked goods making it the perfect oil substitute and helps bulk up cakes and breads and muffins with a boost of nutrition, too! Zucchini has such a mild flavor that it pairs beautifully with everything from cinnamon to chocolate.

@EatingBirdFood has countless of great zucchini-everything recipes. Here is an adaptation on of the healthy zucchini bread.
Mosity and healthier version of Zucchini Bread:
1 1/4 cup all-purpose flour
1/4 cup coconut flour
1/2 Tablespoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 tablespoons of flax seeds
3/4 cup pure maple syrup
1 1/2 cups zucchini, finely grated
1/4 cup olive oil
1/4 cup unsweetened applesauce or quickly make you own in the pressure cooker
1 teaspoon vanilla
1/2 cup chopped walnuts
Oven: 350° F
Peel, slice apples and sprinkle lime add the pressure cooker. Select High Pressure and set cook time for 4 minutes. Blend.
Combine dry ingredients (flours, cinnamon, baking powder, baking soda, salt and nutmeg)
Grind the flax seeds into a fine powder using a coffee or spice grinder (or use 2 1/2 teaspoons pre-ground), and then whisk in 6 tablespoons of water until it becomes gelatinous. Then add maple syrup and zucchini, stir until well blended. Stir in oil, applesauce and vanilla.
Add dry ingredients into the bowl with the wet ingredients and gently stir together until just blended.
Add chopped walnuts
Pour batter into loaf pan.
Bake for 50-60 minutes. Remove loaf from pans and let cool completely on a wire rack before slicing.
